Golden Vanilla Cupcakes

What to Do

This is a nice recipe for basic vanilla cupcakes. This recipe is a bit more time-intensive and complex than the others, but it's worth it. I'll tell you how to make milk chocolate ganache to go with it and how to put it inside the cupcakes.

  1. Preheat the oven to 350 degrees Fahrenheit. Place cupcake liners into the cupcake pan or just spray the pan with a non-stick spray. I recommend Pam Baking spray.
  2. In a large bowl, beat together the butter and sugar with an electric mixer on medium speed. If you do not have an electric mixer, use a large fork or a whisk until the mix is fluffy-looking.
  3. Add the egg yolks one at a time and mix well (no yellow streaks). Add the vanilla and mix well.
  4. In a separate bowl, combine the flour, baking powder and salt. Add this mixture to the creamed mixture (the stuff you mixed before), but alternate between adding a scoop of flour mixture and a splash of milk. Mix well after each addition.
  5. In a separate bowl, and with a clean fork or clean beater blades, beat the egg whites on high speed until stiff peaks form. This is extremely time-consuming if you do it by hand. You'll know they're ready when you pull the blades away and the egg holds on and forms a white mountain.
  6. With a rubber spatula or a spoon, gently fold the egg whites into the batter.
  7. Fill the cupcake liners one-half to three-quarters full. Bake for 20-25 minutes or until a toothpick inserted in the center of a cupcake comes out clean. Enjoy.
