Asian Salmon and Spinach

• 1-wild salmon filet, 6 oz.
• 2 tblspoons Dijon mustard
• 4 tblspoons soy sauce
• 3 cloves garlic, minced
• ½ tspoon honey
• salt, pepper
• 2 cups baby spinach
• sesame oil, if available

Mix in a bowl, 2 tblspoons of Dijon mustard, 4 tablespoons soy sauce, 3 cloves minced garlic, ½ tspoon honey, salt and pepper. Take half the mixture and coat a 6 oz salmon filet and let marinade for 10 minutes.

Grill filet on medium heat for 10-12 minutes until pink throughout.

Meanwhile, mix 2 cloves chopped garlic with 2 cups baby spinach and olive oil in a sautee pan. Sprinkle a dash of soy sauce and if you have it, a dash of sesame oil, on the spinach while sautéing. Serve on the side of the salmon and drizzle the remaining marinade mixture over the salmon.
