Chicken Parmesan and Italian Salad
• 2 Chicken cutlets
• 1 Egg
• 1 cup Bread crumbs
• 1 dash Italian seasoning/fresh basil
• 2-3 Tomatoes
• 1 bulb Garlic
• Parmesan Cheese
Dip the chicken in the egg and then drench in bread crumbs, grill on medium heat for 2 min on each side then place in oven at 300 while making sauce.
Sautee garlic cloves, minced or whole, in olive oil. Cut up two to three fresh tomatoes and put on medium high heat in sauce pan with garlic. Stir in fresh basil or whatever seasonings you have. Cook on medium for about 10 minutes until fragrant.
Remove chicken from oven and cover with tomato sauce, sprinkle with cheese and bake for about 5 minutes.
Toss ¼ head of romaine lettuce with 1 tblspoon olive oil, 2 tblspoons vinegar and ½ tspn Italian seasoning.
Optional-1/4 tspoon mustard for extra zest
