In a large bowl, mix together the flour, baking powder, salt and sugar. Add milk, egg and melted butter and mix with a wisk until smooth.

Heat a lightly oiled griddle or frying pan over medium high heat. Scoop the batter onto the griddle, using 1/4 cup for each cake. Brown both sides and serve hot with syrup - cane syrup is my preference.

Can add cinnamon, mashed peaches, vanilla or blueberries to the mix for extra flavor.
