Banana Coffee Muffins

I am known to keep rotting brown bananas to turn them into sweet baked goods. There's no exception to my rule when making these muffins. Even my picky sister loves them! There are real ingredients in them instead of a mix, which makes them a delicious and healthy breakfast treat.

Banana Coffee Muffins

Prep: 15 minutes Cook time: about 30 minutes

Adapted from Food Network

Makes about 12 muffins or 24 mini muffins

Ingredients

1/3 cup melted butter

4 ripe bananas, smashed

3/4 cup sugar

1 egg, beaten

1 teaspoon vanilla extract

1 1/2 teaspoon strong coffee

pinch of salt

1 1/2 cups all-purpose flour

Banana Coffee Muffins

1. Preheat oven to 350 degrees F. Grease a regular or mini muffin tin or use paper liners.

2. Mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, coffee and vanilla.

3. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour. Mix until everything is just incorporated.

4. Pour batter into prepared muffin tin. Bake for 20 to 30 minutes. Cool completely.
