Let's go to the super market
There are two famous Chinese super markets in Gainesville, Eastern Market and Chun Ching Market. This time, I went to Chun Ching to buy all the required ingredients, including flounder fillet, fresh garlic, fresh ginger, fresh green onion, onion, green pepper, dried chili, soy sauce, cooking wine, salt, fine ground black pepper, black pepper sauce, chili bean sauce, baking soda, and sweet potato starch. You may wonder why there are so many ingredients; actually, in order to cook delicious Sichuan food, seasonings are crucial parts.
There is nothing better than flounder fillet to make this dish. Flounder fillet has no bones and tender meat. This dish requires 4 pieces of regular size flounder fillet sliced into little pieces (2cm X 3cm).
You may find it strange that I use baking soda here. Baking soda can make the meat of the flounder fillet even tenderer. If you don't like overly tender fish, you don't need to add this. This dish just requires 1g of baking soda.
Cooking wine can reduce the fish smell, and if you don't like fish smell, you can add 0.2 OZ of cooking wine to the sliced fish
Sweet potato starch has three functions, including tenderizing fish meat, adding a sweet taste to the fish, and making the fish soup thicker. This one is also optional, and if you like it, you can add 0.2 OZ into the sliced fish
Chinese usually fry minced fresh garlic, sliced fresh ginger, and sliced green onions in hot oil first to make the food smelling better and to stimulate the original taste of the food we cooked. Here, we need 3g of fresh garlic.
As we discussed in the garlic part, ginger plays a similar role in this dish. Here we need to add 2g of sliced ginger.
Green onion also has similar effects as fresh garlic and fresh ginger. Moreover, it will make the food more beautiful visually. Here we need 2g of sliced green onions.
Dried Chili is an important ingredient in this dish. It makes the taste spicier. If you are not good at eating spicy food, be careful when adding it. I like spicy food, so I add 5 dried chilis and cut them into small pieces (1cm X 1 cm).
Chili Bean Sauce is the most important material in this food. After fermentation and flavoring, the soy bean has a special taste, making your dish more fresh and tasty. We need 0.2 OZ Chili Bean Sauce in this dish.
Black pepper sauce is optional in this dish. If you like the strong taste and enjoy the taste of black pepper, you can add it according to your interest. I add 0.1 OZ here.
Similar to black pepper sauce, if you like strong tasting food, you can add it according to your interest. Moreover, it can also remove the fish smell. I add 0.05 OZ in this dish.
Soy sauce is an essential part of Chinese food, so I also add 0.3 OZ of it into my food. As a kind reminder, soy sauce tastes salty, so if you add this sauce, you need to add less salt or no salt.
As I mentioned in the soy sauce part, I will add 0.3 OZ soy sauce in my food. Therefore, I don't add any salt in this dish. But if you only add a little bit or no soy sauce in your dish, you can add some salt.
Chinese usually like putting meat and vegetables together. The vegetables can absorb the taste of the meat, becoming tastier. Moreover, people also can have balanced nutrition. I add 50g of sliced fresh onion in my dish, and you also can add sliced lettuce or Chinese cabbage.
Green pepper is used as decoration for this dish. In addition, it also can make the taste spicier. I add 2 green peppers and sliced them in my dish.
