About: Civilization is a different kind of restaurant. Civilization opened in August 2009 and is the first restaurant that utilizes the worker cooperative in Gainesville, Florida. For a business to be considered worker controlled, the business must be democratically managed by its worker-owners (Wikipedia).
Worker cooperatives encourage workers to be more invested in their job and take greater responsibility for the success of the business. Civilization prides itself on serving local and organic food.
Review: Civilization is charming, but the overall experience is not exceptional. The food takes forever. I completely understand that the food is homemade and cooked to order, but other restaurants, who also cook to order, are able to prepare food in a much more timely fashion.
While the food takes a long time, it is delicious. Its brunch is the highlight. You must order the Florida cakes and try a sparkling beverage.
