I find the best way to learn is through example, and this is a great way to learn RPGs. You could list all the ways to play an RPG, but you can't really understand the subtleties unless you see or hear it in person.

Audio recordings are easier to listen to, as you can stop them whenever you please. However, they are generally longer, and they only lend themselves well to games that have low action, or the action is all narrative.

Call of Cthulhu: The Pale God

This is a recording of a group of people playing the Call of Cthulhu adventure, The Pale God. This is one in a series of recordings, as the website, yog-sothoth.com, has many more Call of Cthulhu recordings, some that are almost 20 hours long in totality.

Blood Island

This is a recording of a group playing a game called Blood Island, which involves pirates on the high seas. The group plays over a Skype connection, showcasing how people can play RPGs even if they are halfway around the world from each other.

Call of Cthulhu: The College

A custom scenario, which is played by the author of the site and his friend as a GM. This is played over a Skype connection as well, and though it is a video, it can be listened to entirely with just audio.
