Fried Pork Chops

Elizabeth Nieves, now 51-years-old with three children, recalls her first experiences with cooking this very meal while growing up in Broklyn, New York.

When did you start cooking?
At ten years old. I used to watch my mom and my aunt and one day I decided to cook while they were out.
What did you make?
I remember, white rice red beans and pork chops.
What was their reaction when they got home?
They were surprised. My aunt was surprised, but the only things is that I was a little disappointed because the rice came out mushy. I was happy I made a meal and surprised them.
Favorite Spanish dish to cook?
Um, that one. White Rice red beans and pork chops.
Least favorite Spanish meal to cook?
The least I would say is chicken stew, pollo guisado, it doesn't taste as good as my mom's.
Fondest memory in the kitchen as a child?
Trying to learn to cook like my mom. I always used to watch her so I could do it on my own. I was never told I had to learn, I would just watch so I could learn.
