Brown Sugar Cinnamon Cake

Ingredients:

 

1 box yellow cake mix

1/2 c sugar

3/4 c veg oil

8 oz. sour cream*

4 eggs

1 cup brown sugar

4 tsp. cinnamon

 

Icing:

1/3 box confectionerÕs sugar

4 tablespoons melted butter/margarine

 

Preheat oven to 300 degrees Fahrenheit.  Grease and flour a 9x13 pan (I use glass).

 

For the cake:

Mix first 3 ingredients thoroughly.  Next, add sour cream.

Add eggs one at a time.

 

Pour mixture into prepared pan

 

Next, mix brown sugar and cinnamon.  Spread this over top of unbaked cake and swirl into batter.

 

Bake cake at 300 degrees Fahrenheit for 45-60 min. My notes say 45-60, but my cake usually takes 55-60 minutes.

 

For the icing:

Mix powdered sugar and melted butter.  Whisk together until combined and thin with water if too thick.

 

Drizzle over warm cake and enjoy!

 

*I use light sour cream, but plain yogurt could be substituted as well for a healthier spin.
