Black Bean, Corn and Avocado Dip


2 avocados

1 can of shoepeg white corn

1 can of black beans, rinsed and drained

4 oz. Feta cheese




2 tablespoons lime juice



Dice avocado, drain corn and drain and rinse black beans.  Toss together with feta cheese, lime juice, and sugar, salt and pepper, to taste. 


Enjoy with tortilla chips, as topping on a taco, or on a salad.


This can be eaten immediately, but tastes best when chilled for an hour or more.  This allows the flavors to blend and the ingredients to reach a cool temperature.
