Interview with Antonio Cao



Antonio Cao is the owner of Vicky Bakery. Vicky Bakery has 10 stores throughout South Florida, and makes some of the best flans using secret family recipes.
Cao's family has been making flans for over 30 years, and he said flans are still one of the most popular items on the menu.

  1. Q: When did the bakery open?

    A: :"The first bakery opened in Hialeah, Fla., 37 years ago. "My grandfather, Antonio, and grandmother, Gelasia, came from Cuba and decided to start a bakery.My grandfather had worked in bakeries before so he already knew the business. After about a year here, they had enough money to buy their first bakery in Hialeah. We now have 10 locations around Miami."

  2. Q: Why did you decide to work at the bakery??

    A:"The bakery has been passed down from generation to generation. I am the third generation owner of the bakery. It is a family tradition and family-operated."

  3. Q: What is your favorite part about owning a bakery?

    A: "My favorite part of owning a bakery is using the secret family recipes that everyone enjoys. I also enjoy the freedom that comes with having my own business.

  4. What types of pastries do you have? What is most popular?

    A: "We make everything here. We make cakes, bunuelos, empanadas, croquetas, brazo jitano, cangrejitos, bocaditos pastelitos of guava and cheese, carne, coco, guava, cheese, flan de coco, flan de calabaza, flan-cheesecake and flan de leche. It is a very long list."

  5. Q: How do you make the flans in the bakery?

    A: "We make the caramel by mixing water, sugar and corn syrup in a large pot. Then we bring it to a boil and with a laddle, we pour it into individual containers. The flan mixture consist of eggs and milk, and I can't really say any more than that. We use the same flan recipe that has been used for three generations, since my grandfather opened the bakery. It's a 'secreto de la casa.'"

  6. Q: Are flans a popular item on the menu?

    A: "The flans are liked and sell well. Flan de leche is the most popular one."

  8. Q: What makes flans unique, compared to other cakes and pies?

    A: "A flan is unique and different from cakes and pies because it is flour less. It is baked in a water bath, has a custard texture and it has caramel, which makes it better I think."

  9. Q: If someone has never eaten a flan, what should they expect?

    A: "If someone eats a flan for the first time, they always come back asking for more."

  10. Q: What is the most important part of a flan?

    A: "The most important part of a flan is the caramel. If you overcook it has a burn taste. It has to be cooked just right."
