Memaw's Pound Cake

This cake is famous in my extended family. The boys are known for picking off the crust, everyone knows about the "science experiment" with the sour cream and baking soda, and everyone love, love, loves to see this cake being made.

Memaw was a special lady and she made a fine pound cake! Everytime there's a family gathering of any sort, there has to be a poundcake. It's like having Memaw with us to celebrate.

It works best if you use a stand-up mixer, but if you only have a hand mixer, that's fine too. Do not, I repeat, DO NOT, attempt to mix this by hand.

Cream the sugar and butter together for 3-4 minutes in a stand-up mixer.

Step 1: Cream the sugar and butter

While the butter and sugar are creaming, spray your baking dish with non-stick spray. Make sure to get every nook and crannie. Be generous with your non-stick spray. Then use sugar to coat the pan. This will give the cake a cruncy shimmer, and it will slide out of the pan much nicer.

Step 2: Sugar the pan

Add one egg at a time, allowing each egg to mix in thoroughly before adding the next. You should get a creamy batter-like consistency after you add the eggs.

Step 3: Add the eggs

Add the baking soda to the sour cream. The acid in the sour cream will react with the baking soda and fluff up. Be sure to let the sour cream "grow" before adding it to the mix.

Step 4: Mix baking soda and sour cream

Alternate between adding half the sour cream and half the flour. Let it completely mix each time. Then add the vanilla.

Step 5: Add sour cream, flour and vanilla

Pour the batter into the pan and spread the top evenly. Make sure you wipe the edges clean so you don't get anything burnt onto your pan.

Step 6: Pour batter into the pan.

Bake at 325 degrees for one hour and 25 minutes on the second rack from the bottom.

Let the cake rest in the pan for ten minutes before turning it out on a rack.

Making a pound cake ahead of time can be risky -- the crust is sometimes too tempting to be left alone. Serve slices of Memaw's yummy pound cake with whipped cream and fresh fruit. There's nothing better!
