Ways to cook fish

The Better Health Channel Web site of Victoria, Austratlia says that baking, shallow frying, grilling, poaching and steaming are healthy ways to cook fish.

To bake a fish, put it in a dish and cover with lemon juice, olive oil and spices. Bake at about 350 degrees fahrenheit.

For shallow frying, coat dry fish in a light layer of flour. Cook it on medium heat in a pan with a small amount of oil or butter.

HEB's cooking tips page describes poaching as cooking the fish in heated liquid like milk, stock, water or wine. Only use enough liquid to cover the fish, then cover the pan and cook "before the boiling point." Fillets need eight to 10 minutes and whole fish need 15 to 20 minutes.
