Cardiologist Arthur Agatston created The South Beach Diet, which received its name because Agatston works and resides in the Miami area. This diet is classified as low-carbohydrate, with a focus on removing bad carbs, or those which, he states, have a high glycemic index. Such carbohydrates cause insulin resistance, and the result is the body's inability to process fat or sugar properly.

Phase I

Individuals go through a two-week first phase that eliminates bad carbs, including dairy products, sugar, candy, fruit and grains. Authorized foods are leans cuts of beef, skinless poultry, fat-free or low-fat lunchmeats and nuts.

Phase II

The food groups eliminated are gradually returned to the diet in smaller amounts, until the individual experiences weight gain. The emphasis remains on foods with a low-glycemic index.

The final phase is maintenance, which comes after the individual has reached target weight.
