Ingredients...

- 1½ lb 1" thick sirloin steak
- 2 tsps. ginger, very finely grated
- 1 clove garlic, crushed
- 1-2 tsps. finely chopped green chili
- 4 tbsps double cream
- ¾ tsp. salt
- vegetable oil
- 1 large egg, beaten
- 3 oz dried breadcrumbs
Instructions...
- Trim meat into 1" cubes. Put into a bowl and add ginger, garlic, chili, cream and salt. Mix well. Cover and refrigerate for 3-6 hours.
- Pour enough oil into a wok to come to a depth of 1". Heat over medium low flame.
- Put the breadcrumbs in a dish. Dip the meat cubes one at a time into the beaten egg and then into the breadcrumbs, rolling them around until they are encrusted.
- When the oil is heated put in as many meat cubes as the pan will hold in a single layer. Fry, turning occasionally, until golden and cooked to your taste.
