Serving and Drinking



It's convenient and knowledgeable to know which wines to eat with which foods, but the quickest way to ruin a wine is to serve it at the wrong temperature. Forget the old adage about serving red wine at room temperature. Instead, let's define the temperature for serving red wine at the low to mid 60s. White wine should be chilled but not cold, so drink it between 55 and 60 degrees. That means before drinking, you may have to put it in the fridge to chill for a couple hours, or take it out of the fridge and let it sit for a while if it's been chilling for too long. Drinking wine that is either too warm or too cold can ruin the flavors.
