How to make Koshari


Recipe for Koshari

2 cups of orange lentils

1 1/2 cups of rice

3 cups of water

2 tablespoons of margarine

1 tablespoon of salt

Sauteed onions

2 onions

olive oil

Step 1 -- Mix the rice and lentils

Again, it's up to you what proportion you'd like to have in your mix. Some people like more lentils than rice or more macaroni than rice. Our family dies over rice so we prefer the former and always mix 1/2 cup more of rice no matter how many people we're serving.

Step 2 -- Boil water and add rice and lentils

Along with the water, you'll add the margarine and the salt. I recommend waiting for the water to boil in order to add the mixture of rice and lentils before sauteeing the onions. You'll have plenty of time to kill while the rice and lentils absorb all the water.

Step 3 -- Sautee onions

Cut two onions long-ways and stir-fry. Toss the onions and press against the bottom of the pan to blacken. It adds a very distinct taste to the koshari. Wait until the onions are caramelized.

Step 4 -- Add sauteed onions to rice and lentils

Once the rice and lentils have absorbed all the water, add the sauteed onions. My family just lays them on top for decorative purposes. This is my favorite of the three dishes.
