Metro Painting

The Metropolitan Bakery was created and opened on West University Avenue in Gainesville in 1989 by Darren R. Grafft, as his first business at only 28 years old. He took his chance on a vision he'd had since he began college at the University of Florida, majoring in Business Economics.

"The Metro," as it's called by its regular customers, really begins its day at 4 a.m. At this time, Darren comes to the Main Street location and helps a few of his employees prepare the day's goodies. The coffee is brewed, the pastries baked. Everything must be completed by 7, three hours to make enough food to supply two stores.

Courthouse employees and construction workers fill the shop mostly at 9 a.m. and the line wraps around the counter. Lisa Trainer, 33, who has worked at the store for 10 years, said it gets busy every morning at 9 and usually doesn't slow down until 10:30. "By then," she said, "it's lunchtime and we get busy again"

The Metropolitan has gained popularity for its quiet atmosphere and unique experience and a new store was opened in 2006 on Main Street. The store is open from 7 a.m. to 3:30 p.m.

As of yet, this is the only web site representing the Metropolitan Bakery. If approved by Darren, it will be used as the official bakery web site.
