Tofu Scrambler

˝ medium onion, chopped
4-5 mushrooms, sliced
Splash of olive oil
1 package firm tofu, crumbled
1-2 tsp curry powder
Pepper (to taste)
Salsa (to taste)
2 stalks green onions, chopped

In a large saucepan, add the onions and mushrooms to a splash of oil and sauté on a medium-high heat until the onions are translucent. Crumble the tofu and add to saucepan. Add the curry and pepper. Sauté 10-12 minutes until moisture has evaporated. Add salsa and green onions and scramble on high heat for 2-4 minutes. Can add any other veggies. Makes 2 or more servings (1).

Vegan French Toast

1 ˝ cups soy milk
2 tbsp flour
1 tbsp nutritional yeast
1 tsp sweetener
1 tsp cinnamon
8-10 bread slices
Fruit (garnish)

In a large bowl, whisk together the milk, flours, yeast, sweetener, and cinnamon vigorously. Soak 1 slice of bread in a batter until bread is gooey. Fry in a non-stick pan or a lightly oiled frying pan on medium heat until golden. Flip and fry the other side. Repeat until the batter is gone. Garnish with fruit and maple syrup. Makes 8-10 slices (1).

Bulgar Oatmeal

2/3 cups bulgur (dried cracked wheat)
1 1/3 cups cold water
Dried fruit of choice, chopped
Nuts (pecans are good)
Favorite spices (cinnamon or nutmeg work well)
Seeds (sunflower, pumpkin)
Brown rice syrup

Add the bulgur to cold water, bring to a boil, and then down to a simmer. Simmer in a covered pan for 12-15 minutes. After it is cooked thoroughly, add the dried fruit, seeds, and nuts (however much you want). Recommendation is around a handful. Add spices if you want. Drizzle with brown rice syrup or maple syrup. Serve hot (4)!
