Salads




Mustard salad ("Kyujachae")is cold vegetable salad and the hot mustard makes the main taste particular. This steps of the dishes are similar to those of the Western salad.


Preparation procedure for mustard salad ("Kyujachae")


Ingredients (4 servings)
Methods
  1. Cut the ham, cucumber, and carrot and egg sheets into the same strips.
  2. Peel and cut the pear into thin strips. Sock it in the sugar water.
  3. Slice the chestnut thinly.
  4. Make squid into strips, scald and cool.
  5. Rinsed the jellyfish to remove the salt water and scald it in water at 140 in Farenheit. And make it strips and mix it with the vinegar and sugar.
  6. Stir boiling water into the mustard until a smooth paste and let it stand in hot tempaerature using microwave.
  7. When the mustard id complete, add the soy sauce, sugar, vinegar, water, and slat and mix well. Grind the pine nuts adding the above mustard mixture.
  8. Arrange the prepared vegetables and sauce.



  • White radish salad ("Musangchae")

White radish salad ("Musangchae")is cold vegetable salad and the basic taste of it is sweet and sour. It contains red hot pepper powder and it adds hot taste more.


Preparation procedure for white radish salad ("Musangchae")


Ingredients (4 servings)
  • 1/2 Ib.whole Korean radish
  • 1/2 tasp.red pepper powder, 1 tsp.salt, 1 tasp.sugar
  • 1 green onion, 1 clove garlic, vinegar, lettuce

Methods
  1. Peel the radish and cut it into really thin strips. Mix the radish strips with the red pepper powder.
  2. Add the sugar, salt, red pepper threads, green onion and garlic to the mixture #2.
  3. Sprinlkle the #3 mixture with the vinegar and mix well. Hint: when sprinkleing salt, it is better squeeze out the water.
