Coffee Toffee Bars

In bowl, blend together butter & drink mix until smooth. Blend in eggs. Blend in flour & baking powder. Add pecans and chocolate chips. Spread into greased 9-inch square pan. Bake in 350 F. (180C) oven for 25-30 minutes or until brownie begins to pull away from side of pan. Cool

Topping:

In small bowl, dissolve coffee granules in water; set aside. In medium bowl, blend together cream cheese & butter until smooth. Blend in dissolved coffee and vanilla. Beat in icing sugar until smooth & thick. If topping seems too thin, beat in additional cup of icing sugar. Spread over cooled brownies. Sprinkle with some cinnamon for garnish. Refrigerate 1-2 hours or until topping is set. (Brownies should be kept refrigerated until just before serving.) Cut into 2" squares.


Coffee Spice Cookies

In small bowl, combine coffee crystals and hot water. Stir until dissolved. In large mixing bowl, combine coffee, sugar, butter, egg & vanilla. Beat at medium speed with electric mixer until light & fluffy. Add flour, baking powder, allspice & salt. Beat at low speed until soft dough forms. Divide dough in half. Shape each half into 1 inch diameter log. Roll logs evenly in sprinkles, pressing lightly to coat. Wrap in plastic wrap or waxed paper and chill 3-4 hours or until firm. Preheat oven to 375. Cut logs into inch slices & place on ungreased cookie sheet 2 inches apart. Bake 6-8 mins. or until set, then cool completely before storing.


Cappuccino Brownies

Heat oven to 350 F. Place almonds in 8-inch square baking pan. Bake for 5-7 mins. or until light golden brown, stirring twice. Set aside. In small bowl, combine coffee granules and hot water. Stir until dissolved. In large mixing bowl, combine coffee, flour, sugar, butter, egg, baking soda and salt. Beat at medium speed with electric mixer until soft dough forms. stir in toffee bits. Press dough evenly into ungreased 15 by 10 inch jelly roll pan. Bake for 15-20 minutes, or until golden brown. Immediately sprinkle with chocolate chips & bake for an additional minute. Spread melted chips over bars while still hot. Sprinkle toasted almonds evenly over chocolate. Cool completely before cutting.


Cappucino Ice-Cream Delight

Blend the above ingredients in a blender to desired consistency to make a deliciously cool summer creation. Try experimenting with other flavored Cappuccino products or maybe adding a second package for a stronger coffee flavor.


Cinnamon Rolls

Mix dough and let rise in a covered bowl for 45 minutes.Place on a floured surface and roll out to 12" x 24" rectangle.Spread 2 tbs. of apple sauce in a thin layer over the dough.Mix together 3/4 cup brown sugar and 2 tsp. cinnamon. Spread over dough.Add raisins, dried blueberries, cherries or other fruit if desired.Roll up, cut into 1" rolls and place on a cookie sheet.Let cinnamon rolls rise for 1 hour.Bake at 300 degrees for 15 minutes.
