Cheesecake 101 how-to video
- All ingredients should be at room temperature before preparing batter
- Butter the sides of the spring-form pan
- Set the oven to 375 °
- Put the cream cheese, sugar and milk into a mixing bowl
- Make sure to use the paddle attachment on standing mixers. If you don't have a standing mixer, a hand mixer can be used
- Mix until creamy
- Add the eggs one at a time
- Add in the sour cream
- Add vanilla
- Add in the flour slowly
- Scrape sides of bowl and beater
- Pour batter into pan
- Smooth out batter in pan
- Place cake on bottom rack of pan
- Bake cake at 375 ° for 1 hour
- When the timer goes off, shut off the oven and open the oven door
- Let cake sit in oven, with the door open, for 45 minutes
- DO NOT TOUCH THE CAKE for the 45 minutes!
- After the 45 minutes, remove the cake from the oven
- Place the cake on a cooling rack to cool
- Leave the cake on the rack until it is cool to the touch
- Cover the cheesecake with tin foil
- Put it in the refrigerator and leave overnight
- To remove the cake: cut around the edge with a knife and remove the pan's sides by unlocking the spring-form latch
- Cut the cake into slices and top with the pie filling
