Cheesecake 101 how-to video

  1. All ingredients should be at room temperature before preparing batter
  2. Butter the sides of the spring-form pan
  3. Set the oven to 375 °
  4. Put the cream cheese, sugar and milk into a mixing bowl
  5. Make sure to use the paddle attachment on standing mixers. If you don't have a standing mixer, a hand mixer can be used
  6. Mix until creamy
  7. Add the eggs one at a time
  8. Add in the sour cream
  9. Add vanilla
  10. Add in the flour slowly
  11. Scrape sides of bowl and beater
  12. Pour batter into pan
  13. Smooth out batter in pan
  14. Place cake on bottom rack of pan
  15. Bake cake at 375 ° for 1 hour
  16. When the timer goes off, shut off the oven and open the oven door
  17. Let cake sit in oven, with the door open, for 45 minutes
  18. DO NOT TOUCH THE CAKE for the 45 minutes!
  19. After the 45 minutes, remove the cake from the oven
  20. Place the cake on a cooling rack to cool
  21. Leave the cake on the rack until it is cool to the touch
  22. Cover the cheesecake with tin foil
  23. Put it in the refrigerator and leave overnight
  24. To remove the cake: cut around the edge with a knife and remove the pan's sides by unlocking the spring-form latch
  25. Cut the cake into slices and top with the pie filling
