Desserts are the icing on the cake to any meal (No pun intended). If you have a sweet tooth, try any southern dessert and you will not be disappointed.

Banana Pudding

I'll have to admit, this is my absolute, hands-down favorite dessert of all time. My favorite part of the dish is when the vanilla wafers are softened by the pudding. You'll have to taste it for yourself. This recipe is orignally fromthis site

Ingredients

smaller banana pudding

This is the smaller portion of banana pudding that uses only 1 batch of the pudding.

Directions

For the Smaller Portion:

  1. Slice the bananas 1/8 inch thick. Line the bottom of a pan with vanilla wafers and place banana slices on top of the vanilla wafers
  2. Combine 3/4 sugar, egg yokes and 1 cup milk in a mixing bowl and mix well.
  3. Add remaining milk and mix well
  4. Cook mixture in a sauce pan and cook over medium heat until the mixture is thick, stirring it constantly
  5. Remove from heat and stir in butter and vanilla
  6. Pour 1/2 of the pudding on top of the vanilla wafer-banana layer
  7. Make a second vanilla wafer-banana layer on top of the pudding
  8. Pour the other 1/2 of the pudding on top of that layer
  9. Chill the dish for at least 1 hour before adding the whipped cream topping
  10. Garnish the top as you like *I like to crumb vanilla wafers over the whipped cream and place the remaining vanilla wafers around the edge of the pan*
Larger banana pudding

This is the larger portion of banana pudding and is made with 2 batches of pudding.

For the Larger Portion:

  1. Make the first batch of pudding using steps 1-5 from the previous list
  2. Make another vanilla wafer-banana layer on top of the pudding
  3. Repeat steps 1-7 to make the second batch of pudding. In steps 6 and 8 substitute the 1/2 portions to full portions.
  4. Chill the dish for at least 1 hour before adding the whipped cream topping
  5. Garnish the top as you like. *I like to crumble vanilla wafers over the whipped cream and place the remaining vanilla wafers around the edge of the pan*

For the Cake

  1. For the cake: Preheat the oven to 350 degrees F. Grease and flour 2 (9-inch) cake pans.
  2. In a medium bowl or on a piece of waxed paper, sift together flour, cocoa, baking soda, baking powder, and salt; set aside.
  3. In a large bowl, cream together sugar and butter. Beat in eggs one at a time. Alternately add flour mixture and buttermilk. Beat in food coloring and vinegar, then add vanilla.
  4. Spread the batter evenly in the pans.
  5. Bake for 20 to 30 minutes or until a wooden toothpick inserted into the center comes out clean.
  6. Turn out onto a rack to cool.

For the Frosting (optional)

  1. In a large bowl, beat the cream cheese and butter.
  2. Beat in confectioners' sugar until fluffy.
  3. Beat in vanilla. Stir in pecans.
  4. Use frosting to fill and ice cake.
