Chicken Fajitas

These fajitas are a little more advanced, require more materials and take a little longer to cook, but they're delicious. They can easily serve two people with leftovers and taste just as good reheated.

  • Three chicken breast filets, defrosted.
  • Half a green bell pepper
  • Half a red bell pepper
  • Half of a small onion
  • Olive oil
  • Pepper
  • Half a packet Fajita seasoning
  • Water
  • Two skillets and spatulas
  • Sharp knife
  • Tortillas, cheese, salsa and lettuce

Prep time: 25 min. Serves 2-3.

  1. Clean onion and peppers and slice into thin strips.
  2. Heat a little olive oil in one of the pans on high heat. Add the sliced vegetables. Sprinkle with pepper.
  3. Cook the vegetables until they start to turn black.
  4. Defrost chicken in the microwave, then slice raw chicken into chunks.
  5. Add a little olive oil to the other pan. Sprinkle chicken with pepper and cook on low-medium heat. The chicken is done when you cut into it and don't see any pink.
  6. Add the cooked chicken to the pan with the vegetables. Add water and the fajita seasoning. Simmer on low for a few minutes.
  7. Serve on tortillas with cheese, lettuce and salsa.
  8. Eat.
