Pan-fried Chicken and Vegetables

This meals looks a little complicated, but couldn't be simpler. Frozen chicken and vegetables are handy to have around and work great for any night of the week.


  • One frozen chicken breast filet
  • Olive oil
  • Pepper
  • Frozen vegetables (Broccoli, carrots, and cauliflower are great)
  • Microwave-safe bowl with lid
  • Skillet and spatula

Prep time: 15 min.

  1. Defrost chicken in the microwave.
  2. Add about two teaspoons of olive oil to the skillet.
  3. Sprinkle chicken with pepper. Place in skillet.
  4. Cook on medium-high until insides are no longer pink.
  5. Add vegetables and about a half-inch of water to microwave-safe bowl.
  6. Cover the bowl, but leave one side open for ventilation.
  7. Microwave for three minutes.
  8. Drain excess water from the bowl. Sprinkle with pepper.
  9. Serve chicken with vegetables. Add sauce if desired.
  10. Eat.
