Apple Pie Slice

About covered fruit pies

Be sure not to let the pie filling stand for more than about 15 minutes before filling the crust, otherwise it will become too juicy and make a soggy mess

Roll out the top and bottom crusts and refrigerate, then make the filling.

After you line the bottom of your pan with the crust and fill the crust, brush the overhanging edge of the bottom crust with cold water.

Then place the top crust on top of the pie and press its edges together with the edges of the bottom crust.

Cut four two-inch-long slits in the top of the pie to keep it from blowing up in your oven.

Frozen Chocolate Mousse Pie

  1. Preheat oven to 350 degrees F.
  2. Prick holes to bottom of pie shell. Bake in oven for 11 minutes or until golden brown. Let cool.
  3. In a medium saucepan over medium-low heat, add chocolate chips, 3 tablespoons heavy cream and chocolate liqueur. Cook until smooth, about 1 minute.
  4. Add vanilla extract. Mix and let cool.
  5. In a mixing bowl combine sugar and 1 quart heavy cream. Whip as if you were making whipped cream. Slowly fold the chocolate sauce into the cream.
  6. Next pour the mousse mixture into the pie shells. Add chocolate chips to the top of the pies. Wrap the pie and freeze for a few hours or overnight.

Pumpkin Pie

  1. Preheat oven to 425. In a large mixing bowl, combine all ingredients (obviously except the pie crust.)
  2. If you use fresh pumpkin, cut the out stem, chop in half, and microwave each half one at a time (about 10 minutes each) until the edges of the skin start to curl in a little bit. Then scoop out the seeds and the gunk you don't want to eat. After that, scoop out the flesh that you'll use in the pie.
  3. Mix well, then pour into the pastry shell and bake for 15 minutes.
  4. Reduce the temperature to 350, then bake another 35 to 40 minutes or until knife inserted one inch from the edge of the pie comes out clean.

Apple Pie

If you choose to mak the crust yourself, double the basic flour crust recipe. Use half for the shell and half to cover the pie after you've filled it. You can top it with either a lattice crust or a full crust.

  1. Preheat oven to 450. Peel, core and cut apples into very thin pieces.
  2. Combine remaining ingredients well, then pour over apples. Stir gently until they're well coated, then place in layers into the pie shell.
  3. Dot the top with about 1 tbsp. of butter, then cover the pie with either a lattice or a basic crust. Sprinkle the top crust lightly with cinnamon and sugar just before you put the pie in the oven.
  4. Bake for 10 minutes, then reduce heat to 350 and bake for 45 to 60 more minutes.

Sweet Potato Pie

  1. Preheat oven to 400 degrees F.
  2. Peel sweet potatoes, removing both the skin and the pale, fibrous layer beneath it. Then cut potatoes into 1-inch chunks and steam in a basket over boiling water until very tender, about 20 minutes.
  3. Puree the potatoes in a food processor, then measure 1.3 cups of the puree and whisk with the eggs and the sugar.
  4. Then whisk in the rest of the ingredients.
  5. Warm the pie crust in the oven until it's hot to the touch. Pour in the filling, then bake for 20 minutes.
  6. Reduce the oven temperature to 325 degrees F. and bake until the center of the filling seems set but quivery, like gelatin, about 20 minutes more.

Key Lime Pie

  1. Preheat oven to 325 degrees F.
  2. Whisk together condensed milk, egg yolks, lime juice and lime zest.
  3. The mixture will thicken as the milk reacts with the acidic citrus juice. Pour the filling into the pie crust
  4. Whip the heavy cream until it's thickened and add the powdered sugar.
  5. Bake the pie until the filling thickens just enough to support the topping, 5 to 7 minutes, but no longer.
  6. If you decide to top with meringue, spread it on top of the pie before baking for 20 minutes longer.
