The Main Course: Shepard's Pie

My mom always made this "all-in-one" meal when I was young. It tastes great, and pleases the pickiest eater! (Except, of course, vegetarians.)
Ingredients Directions
  • 2 to 3 medium onions, chopped
  • 1 to 1 1/2 lbs. ground beef
  • 3 to 4 medium potatoes
  • 1 can creamed corn (15 oz.)
  • 1 can whole-kernel corn (15 oz.)
  • Salt and pepper to taste

Cook the onion and ground beef in a frying pan, adding salt and pepper to taste. Drain the grease from the meat. Cook and mash the potatoes. Put the meat mixture on the bottom of a casserole dish. Add a layer of creamed corn on top of the meat, then a layer of whole-kernel corn, and finally a layer of mashed potatoes on the top. Bake the casserole at 375 degrees for 30 minutes, or until the potatoes are light brown.

Dessert: Cherry Cheese Pie

This is one of the best desserts I have ever tried, and it is very easy to make. My Aunt Ann gave me the recipe.
Ingredients Directions
  • 8 oz. cream cheese, softened
  • 1/2 cup sugar
  • 8 oz. Cool Whip
  • 1 can cherry pie topping (15 oz.)
  • 1 large graham cracker crust

Use a mixer to blend the cream cheese, sugar and Cool Whip until smooth. Spoon the mixture into the graham cracker crust and top with the cherry topping. Cover and refrigerate until firm. For variation, try a different topping, such as blueberry.
