One-Pot Chicken Noodle Soup
This soup is easy, quick and great to serve a big group of friends.
1 rotisserie chicken from the grocery store, meat picked from the bone into bite-sized pieces
2 tbsp olive oil
6 carrots, sliced into small circles
6 celery stalks, sliced into bite-size pieces
1-2 cloves of garlic
1 small onion, diced
1 pkg egg noodles
4 (14.5 oz.) cans chicken broth
Combine veggies, garlic and oil in the bottom of a large soup pot. "Sweat" the vegetables --
don't cook them, just soften them a bit and let the flavor of the garlic infuse it all. To this,
add the chicken, noodles and broth. Stir to combine.
Bring to a boil for about 1 minute, then set the heat to medium-low and let simmer for about 15 minutes.
