These make a great snack, lunch, or even a light dinner. The trick is to use really good bread
if you have it, and real butter. |
2 slices of good bread (sourdough or french both work well)
1 tbsp butter, softened
1/4 cup shredded jack cheese (really any kind will do here, but milder is better)
1 tbsp dijon mustard
1 tbsp sour cream
salt and pepper to taste
Heat a non-stick skillet over medium heat.
Spread the butter on one side of both slices of bread. Combine the cheese, sour cream, mustard, and salt and pepper. Mix well. With a spoon, spread the mixture on one slice of bread, top with the other and place butter-side down into the skillet.
Cook over medium to medium-high heat for about a minute, pressing down. Flip and cook another minute or until golden brown and crisp.
Makes 1 sandwich.
