One of our favorite things to do is come up with a weekend trip and leave for it within one hour.
We pack a bag with whatever we think we might need (we always forget something imperative though, like shoes, and bring things we don't need, like toy tractors), including a lot of snacks for the ride, and go. Then, on the way, we try to figure out what we're going to do while we're there and where we're going to stay (preferably for free).
Two years ago, we went to Tampa for the weekend. It turned out to be a disaster and after another bad experience the following year, we vowed to never return.
We beat "Gwazi" at Busch Gardens
Last year, we went to Savannah for the second largest St. Patrick's Day celebration in the country. We enjoyed watching so many people of all ages get so excited about the holiday. I've never seen so many varieties of green and ways to use it at once!

As freshmen, we went to Daytona Beach one weekend. We had no plans at all, but that's what makes spontaneity so much fun! I think we ate about eight meals at 7-11 (there aren't any in Gainesville) and we were only there for two days.
We thought this guy's bike had everything we wanted - no fat!
Kristin and I also went skiing one winter. We wanted to go on a "winter-y trip" and convinced her parents to take us to North Carolina. The weather wasn't ideal (icy conditions and freezing winds), but we had fun zooming down the mountain screaming and telling other skiers to watch out!
Even though we weren't very good, we had a (cold) blast!
