Southern Style Salmon

  • Salmon filet
  • olive oil
  • sliced red pepper
  • "Rice-A-Roni Mexican Style"
  • "Tony Chachere's Original Seasonings"

Pre-heat oven to 425. Start rice by following directions on the box.

Put the salmon filet onto an oven safe pan and brush entire filet with a generous amount of olive oil. Put sliced red pepper around the filet and sprinkle everything with the "Tony Chachere's Original Seasonings"

Bake for 20-25 minutes or until salmon is soft all the way through. Cooked salmon is a light peachy pinky color.

Serve with rice and red peppers. Good with beer.

Lemon Mahi Mahi w/asparagus

  • Mahi Mahi filet
  • butter
  • garlic and oregano seasonings
  • ground pepper
  • cayenne pepper
  • asparagus
  • 2 lemons
  • "Rice-A-Roni Long Grain & Wild Rice Original"

Start rice.

Pre-heat oven to 425. Put 3 or 4 asparagus down on the bottom of an oven safe pan. I use a glass bread pan because the sides are tall. Then put the Mahi Mahi filet on top of the asparagus. Season the fish with the ground and cayenne pepper, and also the garlic and oregano seasonings. Put a slice of butter on top of the fish. A little less than a cm is big enough. Then put some more asparagus on top of the fish. Squeeze both lemons over entire thing, and then sprinkle a little bit more seasonings on with 2 more slices of butter.

Bake for 20-25 minutes, until it looks done. Serve with rice and asparagus.
